Zucchini & Apple Salad Recipe
Ingredients
| Salad oil | 1/3 Cup (16 tbs) | |
| Lemon juice | 1 Tablespoon | |
| White wine vinegar | 2 Tablespoon | |
| 1 teaspoon each sugar and dry basil | ||
| Salt | 3/4 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| 3 medium-size red or golden | ||
| Delicious apples | ||
| 1/2 medium-size red onion, thinly sliced lengthwise | ||
| 1 green pepper, seeded and cut into matchstick pieces | ||
| Zucchini | 1 pound, thinly sliced | |
Directions
In a large salad bowl, combine oil, lemon juice, vinegar, sugar, basil, salt, and pepper.
Core and dice unpeeled apples and add to dressing; coat apples well with dressing.
Add onion, green pepper, and zucchini.
Stir lightly.
Cover and chill.
Just before serving, mix salad again until well combined.
Taste and add more salt if needed.
