Zucchini and Mushrooms Recipe Video
Ingredients
Onion - 1/2
Courgettes (zucchini) - 3
Champignons (mushrooms) - 8 oz
Basil - 2 teaspoons
Oregano - 1 teaspoon
Wheat-free tamari soy sauce - 2 tablespoons
Olive oil - 2 tablespoons
Water - 1/4 cup
Walnuts or pine nuts (optional) - 1/4 cup
Directions
GETTING READY
1) Dice the onion.
2) Slice the zucchinis and mushrooms into 1/4 inch slices.
MAKING
3) Heat the oil in a pan over medium heat.
4) Add the onion and cook until soft.
5) Add the zucchini and mushrooms, the tamari soy sauce, water and spices, and mix.
6) Cover and cook until the zucchini and mushrooms are soft.
7) Stir in the optional nuts.
