Zucchini A La Grecque Recipe

Ingredients
| 8 small zucchini, scored lengthwise with fork | ||
| Water | 2/3 Cup (16 tbs) | |
| 1 tablespoon corn oil margarine | ||
| Onion | 1 Medium, chopped | |
| Garlic | 1 Clove (5gm), chopped | |
| 4 ripe tomatoes, peeled and chopped | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
In a large saucepan combine zucchini and water.
Cook over medium heat for 6 minutes or until tender.
Remove from heat; set aside.
In a medium skillet heat margarine over medium heat.
Add onion and garlic.
Saute until tender.
Add tomatoes.
Cook until tender.
Season with salt and pepper.
Drain zucchini.
On a serving plate arrange zucchini.
Spoon tomato sauce over top.
Cook over medium heat for 6 minutes or until tender.
