Directions
1. In a pan fry onions with 2 tablespoon vegetable oil until golden. Add garlic cloves and continue to sauté. Put turmeric to taste. Stir to mix.
2. Add cilantro, stir and continue frying for few more minutes. Put the squash, salt and one cup of boiling water and stir.
3. Cover the pot with a lid and simmer for 15 minutes.
SERVING
4. In a serving plate or bowl, serve hot with rice or bread of choice.
