Zucchini Recipe
Ingredients
2 pounds small fresh zucchini
1/3 cup water
1/2 teaspoon salt
4 tablespoons butter or margarine
3 tablespoons finely chopped parsley
Directions
1. Wash zucchini, do not peel. Cut into 1/4-inch slices.
2 Place zucchini and water in a deep 2-quart non-metallic casserole. Cover. Heat in Microwave Oven 7 to 8 (9 to 10) minutes or until tender.
3. Add remaining ingredients and stir to combine.
4. Heat, uncovered, in Microwave Oven for an additional 2 (2 1/2) minutes.
