Zimtsterne Recipe

Summary
Ingredients
1 pound shelled almonds, blanched or unblanched
4 egg whites
1/4 teaspoon salt
3 cups confectioners' sugar (stirred and spooned into the measuring cup)
1 tablespoon lemon juice
1 1/2 tablespoons cinnamon
Directions
Process the almonds, half at a time, with the metal blade until they are finely ground about 30 to 45 seconds.
Beat the egg whites with a mixer until soft peaks form; add salt, and gradually beat in the sugar.
Set aside 1/2 cup of this mixture for a glaze.
Stir the almonds, lemon juice, and cinnamon into the beaten egg whites and sugar mixture.
Let stand for 20 to 30 minutes to allow almonds to soften.Roll out small portions of the mixture to 1/4 inch thick on a board sprinkled with confectioners' sugar.
Cut into star shapes(Or roll into walnut-sized balls and flatten.).
Place on a greased and floured baking sheet and let dry at room temperature 3 to 4 hours.
Spread glaze on top of each.
Bake at 300°F for 25 minutes.
The glaze should remain light in color.
Cool on a wire rack and store in an airtight container.
