Zippy Red Bean Salad Recipe
Ingredients
1 1 lb. can red kidney beans, drained
6 slices bacon, cooked and crumbled
1 c. diced celery
1/2 c. diced dill pickles
2 hard cooked eggs, diced
1/3 c. mayonnaise
2 tbsp. lemon juice
1 tbsp. minced onion
Salt and pepper to taste
Directions
Combine beans, bacon, celery, pickles and eggs in large bowl.
Blend mayonnaise with lemon juice, onion, salt and pepper; pour over salad and toss lightly.
Cover and chill thoroughly.
Serve in lettuce lined bowl.
