Zippy Barbecue Sauce Recipe
Zippy Barbecue Sauce is an meat appetizer sauce. Zippy Barbecue Sauce gets its taste from tomatoes cooked with onion, celery, red pepper and mustard. Zippy Barbecue Sauce is flavored with vinegar.
Ingredients
24 medium tomatoes peeled and chopped
2 cups chopped onion
2 cups chopped celery
1 1/2 cups chopped green pepper
2 hot red peppers
1 cup firmly packed brown sugar
2 cloves garlic, crushed
1 tablespoon salt
1 tablespoon dry mustard
1 tablespoon paprika
1 teaspoon peppercorns, tied in cheesecloth bag
1 teaspoon hot sauce
1/8 teaspoon red pepper
1 cup vinegar
Directions
Combine first 4 ingredients in a large Dutch oven.
Bring to a boil; reduce heat, and simmer, uncovered, 30 minutes, stirring frequently.
Remove from heat put tomato mixture through a food mill, reserving juice.
Bring juice to a boil; reduce heat, and simmer, uncovered, 1 hour and 15 minutes.
Add remaining ingredients, and simmer an additional 1 1/2 hours, stirring frequently.
Quickly pour hot mixture into hot jars, leaving 1/2 inch headspace.
Remove air bubbles; wipe jar rims.
Cover at once with metal lids, and screw on bands.
Process in boiling water bath 20 minutes.
