Zesty Vegetable Skewers Recipe
Ingredients
| Garlic | 1 Clove (5gm) | |
| Salt | 1 Teaspoon | |
| 1/3 cup olive or vegetable oil | ||
| Lemon juice | 3 Tablespoon | |
| Italian seasoning | 1 Teaspoon | |

| Mushrooms | 8 Medium | |
| 2 small zucchini, sliced 1/2 inch thick | ||
| 2 small onions, cut into sixths | ||
| Cherry tomatoes | 8 | |
| 4 wooden skewers (10 inches) | ||
Directions
In a small bowl, mash garlic with salt to form a paste.
Stir in oil, lemon juice, Italian seasoning and pepper.
Thread vegetables alternately onto skewers; place in a shallow baking pan.
Pour garlic mixture over kabobs; let stand for 15 minutes.
Grill for 10-15 minutes, turning frequently, or until vegetables are just tender.
