Zesty Meat Loaf Recipe
The zesty meatloaf is a beef meatloaf made with a tomato soup or sauce for flavor. Combined with saltine cracker for a compact texture, the zesty meatloaf is flavored with worcestershire sauce and topped off with cheese.
Ingredients
1 1/2 pounds lean ground beef
1 can (11 ounces) Condensed Zesty Tomato Soup/Sauce
2 eggs, beaten
3/4 cup finely crushed saltine crackers
1 tablespoon Worcestershire sauce
2 tablespoons grated Parmesan cheese
Directions
1. In large bowl, thoroughly blend beef, 1/2 cup of the soup, eggs, crumbs and Worcestershire.
2. In 12- by 8-inch microwave-safe baking dish, firmly shape meat mixture into 8- by 4-inch loaf.
Cover with waxed paper; microwave on HIGH 15 minutes or until loaf is firm in center, rotating dish twice during cooking.
3. Spread remaining soup over meat.
Microwave, uncovered, on HIGH 2 minutes or until soup is hot. Top with cheese. Let stand, uncovered, 5 minutes before serving.
