Zesty Black Eyed Pea Salad Recipe
Ingredients
| Black-eyed peas | 2 Can (10oz), drained, rinsed | |
| Celery | 1 Cup (16 tbs), chopped | |
| Green pepper | 1 Cup (16 tbs), chopped | |
| Chopped tomato | 1 Cup (16 tbs) | |
| Green onions | 1/3 Cup (16 tbs), sliced | |
| Garlic | 1 Clove (5gm), minced | |
| 1 (4.5-ounce) jar sliced mushrooms, drained | ||
| 1 (4-ounce) jar diced pimiento, drained | ||
| Italian salad dressing | 1 Bottle (1l) | |
| Lettuce leaves | ||
| Green onions | 1/2 Cup (16 tbs), sliced | |
| 3 slices bacon, cooked and crumbled | ||
Directions
Combine first 9 ingredients in a large bowl, tossing gently.
Cover and chill at least 8 hours, stirring occasionally.
Drain vegetable mixture, and spoon into a lettuce-lined serving bowl; sprinkle with 1/2 cup sliced green onions and crumbled bacon.
