 Crabmeat2 1/2 Cup (16 tbs), canned
 Onion2 Tablespoon, grated
 Butter3 Tablespoon
 Heavy cream1 1/4 Cup (16 tbs)
 Flour1 1/2 Tablespoon
 Nutmeg1/2 Teaspoon
 Green pepper1/4 Cup (16 tbs), sliced
 Egg yolks2 , beaten
 Sherry4 Tablespoon
 Grated cheese
 Crisp toast
 Salt To Taste
 Pepper To Taste

Directions

Melt the butter in a frying pan, add the onion and cook gently for 1 minute.
Add the crabmeat and let it simmer for 2 minutes.
Blend in the flour and when mixed, slowly add the cream and seasonings.
Let cook 2 minutes and add the pepper which must be in fine slices and should "be heated only.
Put some cream into the egg yolks and stir it into the crab but do not boil again.
Add sherry and serve immediately on slices of crisp toast, with sprinkled cheese.
This dish can be made at the table with a chafing dish,
