Yugoslav Fish Soup Recipe

Ingredients
1/4 cup (60 mL) olive oil
1/2 cup (125 mL) onions, finely chopped
1/2 cup (125 mL) tomatoes, peeled and diced
1 8-oz (250 mL) bottle clam juice
1/2 lb (250 g) fish fillets, fresh or frozen
2 cups (500 mL) white wine or 1 cup (250 mL) white wine and 1 cup (250 mL) water
1/4 cup (60 mL) instant rice
1/4 tsp (1 mL) curry powder
Salt to taste
Directions
€¢ Place the olive oil, onions and tomatoes in an 8-cup (2 L) microwave-safe bowl, stir well. Microwave 4 minutes at HIGH.
€¢ Add the remaining ingredients. Microwave 10 to 12 minutes at HIGH, stirring halfway through the cooking.
€¢ Serve with crackers that have been buttered and generously sprinkled with sesame seeds.
€¢ Place in a circle on a paper plate, toast 1 minute at HIGH for each 6 crackers, let cool on a rack.
