Ingredients

| Heat diffuser or flame tamer | ||
| Milk | 4 Quart | |
| 4 1-quart widemouthed canning jars with lids, sterilized | ||

Directions
Heat the milk to 180° Fahrenheit in a stainless steel or enamel kettle.
You may use skim, low-fat, or whole milk.
Remember that flavor is not terribly affected by butterfat.
I prefer using low-fat milk for yogurt so that the final product can be used in low-fat/ low-salt dishes.
