Ingredients
1/4 gallon of milk
2 spoons starter
I use a steel container to boil and set the curd.
Directions
Boil the milk. Let it cool for about 15 minutes. You should be able to put your hand in but should not be too comfortable with the temperature.
Put the starter in the milk and mix well with your hand. Cover the container and put it ina warm place. Maybe the oven(don't turn it on) or the stove top if you will be cooking.
In a couple of hours it will be set. Put it in the refrigerator for 2 hours before spooning.

Yes the milk has to be at an optimum temperature. If you can dip your finger and feel comfortable then it is too cold.
