Yogurt Penoche Recipe

Ingredients

 
41/2 cups brown sugar
 
2 cups yoghurt
 
salt to taste
 
1/2 cup seedless raisins
 
1/2 cup nuts
 
1/2 tspn, vanilla

Directions

Put sugar and yoghurt in a pan over low heat and stir constantly until the mixture forms into a soft ball when a little is dropped into cold water.
Do not allow to boil.
Cool, then add vanilla and salt.
Beat until creamy, add raisins and nuts cut very finely.
Turn out onto a buttered pan and cut into squares.
