Ingredients
3 large eggs, separated
1 cup sugar
4 1/2 cups regular all-purpose flour
5 teaspoons baking powder
1 teaspoon salt
1 cup milk
1 teaspoon nutmeg, or vanilla or lemon extract
3 tablespoons melted shortening
Salad oil or shortening for deep frying
Granulated or powdered sugar (optional)
Directions
Beat the egg whites until stiff and dry, then beat in the yolks, one at at time.
Beat in the sugar gradually.
Sift the flour, measure, and sift again with the baking powder and salt; add to the egg mixture alternately with the milk, beating well after each addition.
Add the flavoring and the melted shortening.
Turn dough onto a lightly floured board, roll out 1/2-inch thick, and cut with a doughnut cutter.
Heat oil to 380°.
Drop in a few doughnuts at a time, and turn frequently until well puffed and golden.
Remove with a slotted spoon and drain on paper toweling.
When cool, roll in sugar, if desired.
