 1 lb. turtle eggs
 Butter3 Tablespoon
 Salt, pepper to taste

Directions

Remove membrane from eggs very carefully.
Place in colander and wash.
Salt and pepper eggs; allow them to stand 10 minutes.
Melt butter in frying pan until it bubbles.
Reduce heat to a simmer and wait.
Handle the eggs carefully; slide them into the frying pan, and cook slowly for 20 minutes.
Remove from skillet and serve as you would an omelet, but do not fold over.
