Yellow Squash Rice Recipe
Ingredients
| Uncooked instant rice | 1/2 Cup (16 tbs) | |

| Onion | 1 Cup (16 tbs), chopped | |
| Garlic | 1 Clove (5gm), minced | |
| Yellow squash | 1 1/4 Cup (16 tbs), chopped | |
| Dried oregano | 1/2 Teaspoon | |
| Parsley | 2 Tablespoon, finely chopped | |
| 1 tablespoon light butter | ||
| Salt | 1/4 Teaspoon | |
Directions
1. Cook rice according to package directions, omitting salt and fat.
2. Meanwhile, place a medium nonstick skillet coated with cooking spray over medium heat. Add onion and garlic; saute 3 minutes. Add squash and oregano; saute 3 minutes. Stir in rice, parsley, butter, and salt; toss well.
