Ingredients

 
1 cup split yellow peas
 
5 cups water
 
1 ham bone
 
2 onions, sliced
 
1 cup chopped celery or celeriac
 
2 carrots, sliced
 
1 small potato, sliced
 
1 bay leaf, several sprigs of parsley,
 
1 sprig thyme, tied together
 
1/2-1 cup chopped ham
 
2 tablespoons parsley
 
Garnish:
 
Fried bread croutons

Directions

1. Wash and soak the split peas overnight if not using a quick-cooking variety. Drain and put into a pan, with 5 cups water, the ham bone, vegetables, bay leaf, parsley sprigs, and salt and pepper. Bring to a boil. Then simmer for 1 1/2-2 hours or until peas and vegetables are tender.
2. Remove the ham bone and herbs; put the soup into electric blender and blend until smooth. Measure soup and bring it up to the required quantity with water or stock. Taste and adjust seasoning. Reheat, adding the chopped ham.
3. Sprinkle with chopped parsley, and serve with fried croutons.
