Yankee Fruit Cobbler Recipe
Ingredients
| 6 medium-size apples | ||
| Sugar | 1 1/2 Cup (16 tbs) | |
| Flour | 1/3 Cup (16 tbs) | |
| Ground nutmeg | 1/2 Teaspoon | |
| 2 cups cranberry-juice cocktail | ||
| Biscuit mix | 2 Cup (16 tbs) | |
| Milk | 2/3 Cup (16 tbs) | |
| 1 teaspoon grated lemon rind | ||
Directions
MAKING
1 In a shallow 8-cup baking dish,arrange the apples after they have been pared, cored,quartered and sliced.
2 In a small bowl, combine 1 1/4 cups of the sugar, flour, and nutmeg.Stir in cranberry juice until smooth.Pour over apples and cover.
3 Bake in a hot oven at 400 degrees farenheit for 30 minutes, or until apples are tender.
4 In a medium-size bowl, combine the biscuit mix, 2 tablespoons of the remaining sugar, and milk; stir just until evenly moist. Drop by table-spoonfuls into 8 mounds over the hot apples.
5 In a cup, mix the remaining 2 tablespoons sugar and lemon rind ; sprinkle over biscuits.
6 Bake for another 20 minutes,or until biscuits are golden.
SERVING
7 Serve warm.
