Yankee Bacon Bake Recipe
Ingredients
1/2 pound sliced bacon
1/2 cup yellow cornmeal
1 cup milk
3/4 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
3 beaten egg yolks
3 stiffly beaten egg whites
Directions
Cook bacon till crisp; drain and coarsely crumble.
Set bacon aside.
In saucepan stir cornmeal into the 1 cup milk; cook, stirring constantly, till mixture is thickened and bubbly.
Remove from heat.
Stir together flour, sugar, baking powder, and salt; blend into cornmeal mixture.
Stir in the remaining 1 cup milk and egg yolks; fold in the beaten egg whites and crumbled bacon.
Turn into a greased 1 1/2-quart casserole or souffle dish.
Bake, uncovered, at 325° for 55 to 60 minutes.
