2 3/4 cups biscuit mix (retain 1/4 cup to flour board)
1(17 ounce) can yams in syrup, undrained and mashed
1/4 cup butter, melted
Pinch cinnamon
Directions
Place biscuit mix in large bowl and cut yams and butter into it.
Add a pinch of cinnamon if desired.
Mix well.
Knead on floured board until dough is not sticky.
(Knead in additional biscuit mix, if necessary.) Pat out to 1/2-inch thickness and cut into biscuits.
Bake 12 to 15 minutes at 400 degrees.
