Yambilee Ice Cream Pie Recipe

Ingredients
3/4 cup ginger snap crumbs (about 12 2rinch cookies )
2 tablespoons melted butter or margarine
I tablespoon sugar
II 2-inch ginger snaps
1 pint vanilla ice cream, softened
1/4 cup chopped pecans
3 cups mashed cooked yams
1/4 cup maple-blended syrup
1/2 cup heavy cream '
1/4 teaspoon orange extract
1 tablespoon sugar
1/4 teaspoon cinnamon

Directions
Mix crumbs, butter and 1 tablespoon sugar; press into bottom of 9-inch pie plate.
Place ginger snaps around edge of pie plate.
Combine ice cream, chopped pecans, yams and syrup; blend thoroughly.
Pour yam mixture into pie plate; freeze.
Combine heavy cream, orange extract, 1 tablespoon sugar and cinnamon; whip until soft peaks form.
Garnish frozen pie with whipped cream and pecans.
Note: If pie is very firm, let stand at room temperature 15 minutes before serving.
