Ingredients
Fish Fillets- 2 pounds
Onion- 1no, roughly chopped
Salt- 2 1/4 teaspoons
Pepper- 1/2 teaspoon, freshly grounded
Water- 1 cup
Yams or Sweet potatoes- 3 cups, cooked and mashed
Light Cream- 1/2 cup
Egg- 1no, beaten
Flour- 1/2 cup
Fat- for deep frying
Directions
GETTING READY
1) In a saucepan cook together fish, onions, 1 1/2 salt and pepper along with water, for 20 minutes or until fish flakes off easily.
MAKING
2) Drain, cool and flake the fish.
3) In a large bowl, mix yams, cream, egg and salt until light and fluffy.
4) Add in the fish, taste for seasoning.
5) Shape into 2 inch balls and roll into flour.
6) Heat fat to 375° F and fry the fish balls until evenly brown.
SERVING
7) Drain on paper napkins and serve hot.
