Yakitori Recipe
Ingredients
| Soy sauce | 1/2 Cup (16 tbs) | |
| 1/4 cup sweet sake or dry sherry | ||
| Sugar | 1 Tablespoon | |
| 1 teaspoon grated fresh ginger root | ||
| Chicken livers | 1/2 pound, cut in half | |
| 1 large whole chicken breast, split, skinned, boned, and cut in 1-inch cubes | ||
| 4 scallions, cut into 1-inch lengths | ||
| Sushi | ||
Directions
Combine soy sauce, sherry, sugar, ginger root, and 1/4 cup water.
Boil 1 minute; cool.
Marinate chicken livers, Chicken cubes, and scallion pieces in soy mixture for 15 to 30 minutes; turn once.
On short wooden skewers thread a chicken cube, a chicken liver piece, a scallion piece, another chicken liver piece, and a chicken cube.
Grill over hot coals 4 to 5 minutes per side; brush occasionally with marinade
