Directions

Cut the root and top off the green onion. Cut each root portion into 3 to 4 long pieces.
Skin and debone the chicken thigh, reserve the skin. Trim off and discard the fat. Chop the chicken thigh into small pieces. Also chop the skin into pieces.
Prepare the skewers by first soaking in water for half an hour. Thread the green onion, then 3-4 pieces of the chicken and then again a piece of green onion. Repeat the same with skin and the remaining chicken and onion pieces.
Meanwhile prepare the sauce. In a deep pan add all the sauce ingredients, mix well. Rapidly boil and stir, cook down to less than half until syripy. Keep an eye on the sauce or it will boil over.
Place the skewers on the grill. Turn and cook evenly. Spoon over or brush with the sauce frequently until the chicken is cooked.
Remove on a plate.
