World's Best Coconut Cookie Recipe

1 cup (2 sticks) butter, softened
 
1 cup granulated sugar
 
1 cup packed brown sugar
 
1 egg
 
1 cup vegetable oil
 
1 cup rolled oats
 
1/2 cup shredded coconut
 
1 cup crushed cornflakes
 
1/2 cup chopped pecans or walnuts
 
31/2 cups flour
 
1 teaspoon salt
 
1 teaspoon vanilla extract

Directions

Cream the butter and sugars in a mixing bowl until light and fluffy.
Beat in the egg and vegetable oil mix in the oats, coconut, cornflakes, pecans, flour, salt and vanilla.
Drop by teaspoonfuls 2 inches apart onto a greased cookie sheet.
Bake at 350 degrees for 10 minutes or until light brown.
