Ingredients
| Wheat berries | 3/4 Cup (16 tbs) | |
| Water | 2 Cup (16 tbs) | |
| Whole wheat flour | 1 Cup (16 tbs) | |
| Nuts | 1 Cup (16 tbs) | |
| Baking soda | 1 Teaspoon | |
| Salt | 1 Teaspoon | |
| Tofu | 1/2 Cup (16 tbs), crumbled | |
| Water | 1/2 Cup (16 tbs) | |
| Barley Malt or Maple Syrup - 1/4 cup | ||
| Oil | 2 Tablespoon | |
Directions
MAKING
1) Into a saucepan, mix together the whole wheat berries and water
2) Bring the mixture to a boil over medium heat
3) Take off from the heat and allow to stand for about 2 hours
4) Return to the stove and boil again to a simmer for about an hour
5) Preheat the oven to 350 F
6) Into a bowl, mix the flour, nuts, baking soda and salt
7) Into a blender, place the barley malt or maple syrup and oil and blend till a smooth consistency is obtained
8) Tip in the tofu mixture into the flour mixture and mix to combine
9) Into a colander, drain the whole wheat berries and fold in the flour mixture
10) Pour the mixture into 8 x 4 inch bread pan
11) Bake for an hour and once baked allow to cool in the pan
12) Turn out onto a wire rack to cool
SERVING
13) Slice and serve with butter
