Winy Fruit Relish Cake Recipe
Ingredients
3 eggs, separated
2/3 cup sugar
1/3 cup of fruit wine
3/4 cup regular white flour
3/4 cup roasted and ground garbanzo sprouts
1/4 lb. butter melted and cooled slightly
1/2 cup fruit from relish, chopped fine
Pinch of salt
Directions
Preheat oven to 350°.
In large bowl beat yolks, adding sugar gradually.
Add wine and blend in.
Add flour and mix well.
Stir in ground sprouts.
Stir in butter, mixing well.
Add chopped fruit.
Beat whites until stiff but not dry, with a pinch of salt.
Fold whites into batter.
Pour into one 8-inch greased layer cake tin or two 5 x 2/2-inch loaf tins.
Bake for 35-40 minutes until cake tests done.
Let stand 10 minutes.
Turn out onto racks.
Cool before cutting.
