Ingredients

 Head of lettuce1 , washed
 Cooked beetroot4 Small, sliced
 Eggs4
 Fennel bulb1 Small, trimmed
 Parsley sprigs1 Tablespoon, washed
 Olive oil3 Tablespoon
 White wine vinegar1 Tablespoon
 Ground black pepper To Taste
 Salt To Taste

Directions

Break lettuce into small shreds and arrange on a serving platter.
Add cress, beetroot, eggs, fennel and parsley.
Toss gently.
Mix together the oil, vinegar and seasoning.
Pour over salad to serve.
