Winter Pear And Stilton Salad Recipe
Winter pear and stilton salad is a vegetable pear salad. Prepared with a honey mustard vinaigrette, the winter pear and stilton salad is a cheese, fruit and vegetable combo salad. Made with mixed salad greens, lettuce leaves, stilton or gorgonzola cheese, the winter pear and stilton salad is tossed and good to serve any time.
Ingredients
1/3 cup extra virgin olive oil
1 1/2 tablespoons sherry wine vinegar or white wine vinegar
1 tablespoon Dijon-style mustard
4 teaspoons honey
1/4 teaspoon salt
2 ripe Hose, Bartlett or Anjou pears
Lemon juice (optional)
5 cups washed and torn assorted gourmet mixed salad greens, such as oakleaf, frisee, watercress, radicchio, arugula or escarole
2 cups washed and torn Boston or Bibb lettuce leaves
6 ounces Stilton or Gorgonzola cheese, crumbled
Freshly ground black pepper
Directions
Place oil, vinegar, mustard, honey and salt in small bowl.
Whisk together until combined.
Cover and refrigerate up to 2 days.
Quarter and core pears; cut into 1/2-inch pieces.
To help prevent discoloration, brush pear pieces with lemon juice, if desired.
Combine greens, pears, cheese and dressing in large bowl.
Toss lightly to coat; sprinkle with pepper.
Whisk together until combined.
