Healthy Winter Fruit Salad Recipe
Winter Fruit Salad as the name suggests works great for winter. I also took along Winter Fruit Salad when my family got together for a picnic and it went over well. Do not wait for winter to try it!
Ingredients
1/4 cup chopped dried apricots
3/4 cup water orange juice
1/4 cup raisins
2 medium-size tart red apples, sliced
1 pear, sliced
2 oranges, sectioned
1/2 grapefruit, sectioned
2 kiwi fruits, peeled andm sliced
2 tablespoons sesame seeds
Dash of cinnamon
Dash of nutmeg
1 cup low-fat yogurt
2 drops vanilla extract
Directions
Place the apricots and water in a small bowl and soak overnight.
Drain the water into a measuring cup and add enough orange juice to make 3/4 cup of liquid.
Place the apricots, juice, and raisins in a small saucepan and bring to a boil.
Reduce heat and simmer for 5 minutes.
Turn off heat.
Combine the cooked fruit with the apples, pears, oranges, grapefruit, and kiwi fruits in a medium-size serving bowl.
Add the sesame seeds, cinnamon, and nutmeg.
Toss together gently with the cooking liquid from the apricots.
Chill before serving, if desired.
