Winter Fruit Compote Spiced Recipe

Ingredients
6 dried prunes (with pits), soaked in water until plump
6 dried apricots, halved
1 large pear, cut into 6 wedges
1 large tart green apple, cut into 12 wedges
3 tablespoons golden raisins
1 unpeeled lemon, halved lengthwise and cut into 1/8-inch- thick slices
1/2 vanilla bean, split lengthwise
1/2 small cinnamon stick (optional)
2 cups water
6 tablespoons Port or Sherry
2 tablespoons slivered blanched almonds, toasted (garnish)
Directions
Combine all ingredients except almonds in large saucepan and bring to simmer over high heat.
Cover partially, reduce heat to low and cook until fresh fruit is very tender and dried fruit is plump (but not falling apart), 30 to 45 minutes.
Remove from heat and cool to room temperature.
