Winter Borscht Recipe

Ingredients
3 pounds turkey legs
2 medium-sized Spanish onions, chopped
3 large cloves garlic, minced
3 bunches beets, peeled and sliced
1/2 cup sugar
1/2 teaspoon citric acid or 2 tablespoons lemon juice

Directions
1. Place the turkey, onions, and garlic in a large stockpot. Add water to cover plus 1 inch. Bring to a boil, reduce heat to low, partially cover, and cook for about 45 minutes.
2. Add the beets, sugar, and citric acid or lemon juice. Raise heat to high and bring the soup to a boil. Reduce heat to low and cook for about 15 minutes. Skim fat off the top. Add salt to taste. other choices: ' , Substitute flanken or short ribs for the turkey legs, and cook for 15 minutes longer (1 hour total) in step 1.
