Wine-Poached Pears With Berry Sauce Recipe
An empty belly is a great cook and Wine-poached Pears With Berry Sauce is a great way to fill it. In my estimation, if one is a chef, one needs to have a personal recipe of Wine-poached Pears With Berry Sauce, just like I do.
Ingredients
1 cup water
3 tablespoons lemon juice
6 medium-size firm, ripe pears
1 1/2 cups dry Italian white wine
1/2 cup water
1/3 cup sugar
Rind of 1/2 lemon, cut into pieces
1 (3-inch) stick cinnamon
4 whole cloves
1/2 cup reduced-sugar strawberry spread
2 1/2 teaspoons raspberry liqueur
Lemon rind curls (optional)
Directions
Combine 1 cup water and lemon juice, set aside.
Peel pears, and cut a thin slice from bottoms so pears stand upright.
Dip pears in lemon water, coating well.
Combine wine, 1/2 cup water, sugar, lemon rind, cinnamon stick, and cloves in a Dutch oven, cover and bring to a boil.
Add pears; cover, reduce heat, and simmer 20 to 25 minutes or until pears are tender but still hold their shape.
Let pears cool in wine mixture.
Combine strawberry spread and raspberry liqueur in a small saucepan.
Cook over medium heat until strawberry spread melts and sauce is warm. (If sauce is too thin, let stand a few minutes to thicken slightly.)
Drizzle sauce over pears.
Garnish with lemon rind curls, if desired.
