Directions

Bring 1 inch of water to a boil in a steamer.
Place potato slices in a colander or steamer basket, cover, and steam for 15 minutes or until tender.
While potatoes are steaming, heat 1/4 cup of the white wine in a skillet over medium heat.
Add mushrooms.
Cook and stir for 5 minutes over medium heat.
Add more wine if necessary during this process.
Place warm steamed potato slices, warm mushrooms and any remaining liquid from the skillet, the remaining 1/4 cup of white wine, parsley, pepper, and tomato in a large bowl, toss, and serve.
