Spareribs - 3 pounds, cut into 4-rib portions
 
White table wine -1 cup
 
Lemon juice -1 1/2 teaspoons
 
Sugar - 2 teaspoons
 
Salt - 1 1/2 teaspoons
 
Angostura bitters - 6 drops
 
Chili sauce - 1/4 cup

Directions

GETTING READY
1. Wash the ribs and then tip the spareribs into boiling salted water and simmer until almost tender. This will take about 1 hour. Drain the meat and set aside to cool.
2. Cover with wine and let stand about 4 hours.
3. Preheat the grill

4. Just before serving, drain the meat thoroughly and reserve wine.
5. Combine wine with remaining ingredients and mix well.
6. Place spareribs on barbecue rack. Baste with wine sauce. Broil spareribs, turning frequently and basting frequently, for about 25 minutes, or until meat is brown and tender.
