Wine Consomme Recipe

The flavor of this Wine Consomme recipe has played on my senses so much that I hardly ever go for any other Wine Consomme recipe. This recipe is a good way to use Alcohol. I prefer to make Wine Consomme as a Side Dish for all my family get-togethers. Is there a higher crime than reading about this Wine Consomme and not trying it out?

Ingredients

 
4 cups regular strength beef stock
 
1 egg white, slightly beaten
 
1 cup dry red wine
 
1 teaspoon sugar
 
Dash lemon juice
 
Salt and pepper
 
Thin lemon slices

Directions

Heat beef stock to boiling point.
To clarify it, stir in the egg white, and bring mixture to a boil; strain through a moistened muslin cloth, discard egg white, and return clarified stock to the pan.
Bring again to a boil, and add wine, sugar, and lemon juice.
Add salt and pepper to taste.
