Wilted Lettuce Salad Recipe
This wilted lettuce salad is an excellent salad recipe that can be served as a side or a light lunch. Made with lettuce, radishes, eggs and bacon slices, this lettuce salad is made appetizing with horseradish and red wine vinegar dressing.
Ingredients
1 large head boston lettuce
6 radishes, thinly sliced
1 hard boiled egg
5 6 slices bacon
1 teaspoon sugar
1/4 cup red wine vinegar
1/4 teaspoon prepared horseradish
1/8 teaspoon black pepper
5 6 scallions, chopped
Directions
Wash and drain the lettuce and break it up into a salad bowl.
Add sliced radishes.
Remove the yolk carefully from the hard boiled egg and set aside.
Chop the white of egg and sprinkle over the lettuce.
Cook the bacon in a skillet until crisp.
Remove, and drain on absorbent paper.
Add sugar, vinegar, horseradish and pepper to the bacon drippings in the skillet.
Mix well, add scallions and heat until the mixture bubbles, then pour at once over the lettuce.
Toss lightly.
Add the crumbled bacon and sprinkle with the sieved hard boiled egg yolk.
Add sliced radishes.
