Wilted Spinach Salad Recipe
Ingredients
| Spinach | 1/2 pound | |
| 1/4 cup sliced green onion with tops | ||
| Ground pepper | 1 Dash | |
| 2 or 3 slices bacon | ||
| White wine vinegar | 1 Tablespoon | |
| Lemon juice | 2 Teaspoon | |
| Sugar | 1/2 Teaspoon | |
| 1 hard-cooked egg, chopped | ||
Directions
Wash fresh spinach and pat dry on paper toweling; tear into a bowl.
Add green onion; sprinkle with pepper.
Chill.
Cut bacon into small pieces.
In large chafing dish or skillet cook bacon till crisp.
Blend in vinegar, lemon juice, sugar, and 1/4 teaspoon salt.
Gradually add spinach and green onion, tossing just till spinach is coated and wilted slightly, 3 to 5 minutes.
Turn into serving dish; sprinkle with chopped hard-cooked egg.
