Ingredients

 Bacon strip3
 Vinegar1/4 Cup (16 tbs)
 Sugar2 Teaspoon
 Salt1/4 Teaspoon
 Pepper1/8 Teaspoon
 Dried tarragon1/8 Teaspoon, crushed
 Celery1/4 Cup (16 tbs), chopped
 1 tablespoon sliced green onion
 Spinach leaves package1
 2 medium oranges, sectioned, each section seeded and cut in half

Directions

With scissors, snip bacon into 1-in pieces into 3-qt casserole.
Microwave at High (10) 3 Minutes, until crisp.
With slotted spoon, remove bacon to paper towels to drain.
To drippings in casserole add vinegar, sugar, salt, pepper and tarragon.
Microwave at High (10) 2 to 3 Minutes to boil.
Stir in celery and onion.
Gradually add spinach to hot dressing, tossing to coat each piece, just until slightly wilted.
Add orange segments and crisp bacon pieces and toss again lightly.
Serve immediately.
