Wilted Raw Spinach Salad Recipe
Ingredients
| Bacon fat | 2 Tablespoon | |
| Onion | 1 Small, minced | |
| Flour | 2 Tablespoon | |
| 1 cup water or chicken consomme | ||
| 1 teaspoon powdered mustard | ||
| Vinegar | 3 Tablespoon | |
| 1 pound trimmed, washed, drained spinach, in bite-sized pieces | ||
| Salt | To Taste | |
| Ground pepper | 1 To taste | |
Directions
Heat the bacon fat in a small casserole.
Add the onion.
Cook, stirring constantly, until the onion is soft and golden.
Stir in the flour and cook 1 more minute.
Stir in the water, mustard and vinegar.
Cook over low heat, stirring constantly, until thickened and smooth.
Put the spinach into a salad bowl.
Pour the dressing over the spinach and toss.
Season with salt and pepper and serve immediately.
