Ingredients

 Bacon fat2 Tablespoon
 Onion1 Small, minced
 Flour2 Tablespoon
 1 cup water or chicken consomme
 1 teaspoon powdered mustard
 Vinegar3 Tablespoon
 1 pound trimmed, washed, drained spinach, in bite-sized pieces
 Salt To Taste
 Ground pepper1 To taste

Directions

Heat the bacon fat in a small casserole.
Add the onion.
Cook, stirring constantly, until the onion is soft and golden.
Stir in the flour and cook 1 more minute.
Stir in the water, mustard and vinegar.
Cook over low heat, stirring constantly, until thickened and smooth.
Put the spinach into a salad bowl.
Pour the dressing over the spinach and toss.
Season with salt and pepper and serve immediately.
