Wilderness Baked Beans Recipe
Ingredients
| White beans | 4 Cup (16 tbs) | |
| 2 whole med. onions | ||
| 1 lb. salt pork, sliced or 1 lb. bacon and 1 Tbsp. salt | ||
| 1 lb. pure lard | ||
| 1 c. brown sugar or molasses, or 1/2 c. each | ||
Directions
Soak beans for 12 hrs. or boil for 1 hr.
Place onions in bottom of pot.
Add drained beans, lard, molasses and brown sugar.
Place meat slices on top.
Add water just covering meat.
Cook in oven at 300° for 4 hrs.
Or, in wilderness: Build campfire.
Enjoy evening of song, dance and fishing stories.
Before bedding down, dig hole in sand 18" deep.
Dump all hot coals in hole.
Place pot on hot coals, cover pot with aluminum foil to keep dirt out.
Bury with 4" sand over pot.
Grab some Z's, and wake up to a perfect authentic French Canadian wilderness breakfast.
