Wild Rice And Vegetable Salad Recipe Video
A really simple but delicious wild rice salad - perfect for a picnic
Ingredients
1 cup cooked wild rice, or brown rice
1 tsp lemon juice
2 Tbs chopped parsley
1/4 cup chopped green onion
1/2 cup finely chopped celery
1/2 cup chopped cooked brocollini or brocolli
2 tbs red wine vinegar
1 Tbs dijon mustard
1 Tbs olive oil
salt and freshly ground black pepper
Directions
Combine rice, lemon juice, parsley, green onion and celery and brocollini
whisk together vinegar, dijon mustard and olive oil and pour over rice mixture, toss
to coat. Season with salt and pepper - chill for up to 8 hours.
