Wild Rice With Dates Recipe

 Onion1 , chopped
 Celery stalks4 , diced
 Wild rice1 Cup (16 tbs)
 Chicken stock/Beef stock3 Cup (48 tbs)
 Salt1 Teaspoon
 Chopped toasted walnuts1⁄2 Cup (8 tbs)
 Dates1⁄2 Cup (8 tbs)

Heat butter in a heavy saucepan.
Add onion and celery; saute gently for 10 minutes.
Add rice and stir for 3 minutes more.
Add stock and salt; bring to a boil.
Reduce heat; cover pan and simmer for about 1 hour.
Grains should be firm but not crunchy.
Add the walnuts and dates.
Toss well, then set off the heat for 5 minutes to allow the dates to soften a little.
