Wild Rice With Dates Recipe

4 Tbsp. butter
 
1 onion, chopped
 
4 celery stalks, diced
 
1 cup wild rice
 
3 cup chicken or beef stock
 
1 tsp. salt
 
1/2 cup chopped toasted walnuts
 
1/2 cup finely cut dates

Directions

Heat butter in a heavy saucepan.
Add onion and celery; saute gently for 10 minutes.
Add rice and stir for 3 minutes more.
Add stock and salt; bring to a boil.
Reduce heat; cover pan and simmer for about 1 hour.
Grains should be firm but not crunchy.
Add the walnuts and dates.
Toss well, then set off the heat for 5 minutes to allow the dates to soften a little.
