This Wild Rice Tabbouleh is one of the best rice salads that I've ever known. I have this savory rice with a plethora of vegetables and seasonings as it is, but you can have it as a side course with meat or any other suitable dish ! Ingredients

 4 cups cooked wild rice
 Garbanzo beans1 Can (10oz), drained
 Minced parsley1 1/4 Cup (16 tbs)
 Mint leaves3/4 Cup (16 tbs), minced
 3/4 cup finely chopped green onions
 Tomatoes3 , chopped
 Lemon juice1/2 Cup (16 tbs)
 Olive oil1/4 Cup (16 tbs)
 Salt1/2 Teaspoon

Directions

Mix ingredients in large bowl until well blended.
Refrigerate at least 1 hour and up to 1 week.
Toss and serve over lettuce leaves.
