Ingredients

 
75g wild rice
 
75g brown rice
 
75g Basmati rice
 
4 tblspn snipped chives
 
2 tblspn chopped fresh parsley
 
100g walnuts, chopped
 
60g dried apricots, chopped
 
DRESSING:-
 
3 tblspn walnut oil
 
3 tblsn olive oil
 
1 tspn Dijon mustard
 
2 tblspn white wine vinegar
 
1 tblspn lemon juice
 
Salt
 
1/2 tspn soft light brown sugar
 
Freshly ground black pepper

Directions

Cook rice in separate pans of boiling salted water until just tender.
Drain, combine in a salad bowl and allow to cool.
Add chives, parsley, apricots and walnuts and mix well.
Make dressing.
Combine oils, vinegar, lemon juice, sugar and mustard in a screwtop jar.
Close lid tightly and shake dressing until well mixed.
Add salt and pepper to taste.
Pour dressing over salad; toss well to coat.
