Wild Rice Mushrooms Recipe
Ingredients
| Onions | 1 Cup (16 tbs), chopped | |
| Butter | 3 Tablespoon | |
| Chicken broth | 1/2 Cup (16 tbs) | |
| Long grain rice package | 1 | |
| Cooked ham | 1/2 Cup (16 tbs), minced | |
| Garlic | 3 Clove (5gm), minced | |
| Butter | 1 /2 Cup (16 tbs) | |
| 4 dozen 2-in.-wide fresh mushrooms, stems removed | ||
| Lemon juice | 2 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
In a large saucepan, cook onions in 3 tablespoons melted butter until soft.
Stir in broth, contents of rice and seasoning packets.
Bring to a boil.
Cover tightly.
Cook over moderate heat until water is absorbed, about 25 minutes.
Add ham and set aside.
In a large skillet, cook garlic in 1 /2 cup butter until golden.
Add mushrooms and lemon juice.
Cook over moderate heat for 4 to 5 minutes.
Spoon rice mixture into mushrooms.
Stir in broth, contents of rice and seasoning packets.
Bring to a boil.
