Ingredients
| Hot water | 4 1/2 Cup (16 tbs), divided | |
| 1/2 cup uncooked medium pearl barley | ||
| Wild rice | 1/2 Cup (16 tbs), drained, rinsed | |
| Mushrooms | 1/2 Cup (16 tbs), sliced | |
| 1/2 cup sliced carrot, 1/4 inch thick | ||
| Green onions | 1/4 Cup (16 tbs), sliced | |
| Snipped parsley | 2 Tablespoon | |
| Garlic | 1 Clove (5gm), minced | |
| Bouquet garni | 1/2 Teaspoon | |
| 1/2 teaspoon low-sodium instant chicken bouillon granules | ||
| Salt | 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Broccoli flowerets | 1/2 Pound | |
| Whole kernel corn | 1 Cup (16 tbs), frozen | |
| Evaporated milk | 1/2 Cup (16 tbs), skimmed | |
Directions
In 3-quart casserole, combine 1 1/2 cups water and barley.
Cover.
Microwave at High for 5 minutes.
Reduce power to 50% (Medium).
Microwave for 10 minutes.
Rinse and drain.
Return to same casserole.
Stir in remaining 3 cups water, wild rice, mushrooms, carrot, green onions, parsley, garlic, bouquet garni, bouillon, salt and pepper.
Re-cover.
Microwave at High for 3 minutes.
Reduce power to 50% (Medium).
Microwave for 45 to 55 minutes longer, or until wild rice kernels begin to open, stirring after every 15 minutes.
Add remaining ingredients.
Re-cover.
Microwave at High for 8 to 11 minutes longer, or until broccoli is tender-crisp, stirring twice.
Cover.
Microwave at High for 5 minutes.
Reduce power to 50% (Medium).
Microwave for 10 minutes.
